Ingredientes

  • 4 ounce Chuka soba noodles
  • 1 Tbsp. Oriental sesame oil
  • 2 Tbsp. Sesame seeds
  • 2 c. Fresh bean sprouts
  • 1/4 lb Small cooked shrimp, peeled
  • 3 x Green onions, thinly sliced
  • 1 stalk celery, thinly sliced on the diagonal
  • 1/4 lb Mushrooms, thinly sliced
  • 1/3 c. Rice wine vinegar
  • 2 Tbsp. Sugar
  • 2 Tbsp. Soy sauce
  • 1/4 tsp Grnd ginger
  • 1/4 tsp Dry mustard
  • 1 pch Cayenne pepper
  • 1/4 c. Salad oil

Direcciones

  1. To prepare salad, add in noodles to a large kettle of boiling salted water.
  2. When water returns to a boil and noodles come to top, cook till just tender (2 to 3 min). (If another type of pasta is used, follow package directions.) Drain, rinse with cool water, and drain again. In a large bowl mix noodles with sesame oil; set aside. Stir sesame seeds in a small frying pan over medium heat till lightly browned (6 to 8 min); cold. Add in bean sprouts to a large kettle of boiling water; when it returns to a boil, remove from heat, drain, rinse with cool water, and drain again; add in to noodles. Cover and chill for at least 1 hour. To prepare Soy Dressing, mix vinegar, sugar, soy sauce, ginger, mustard, and cayenne in a small bowl. Using a whisk gradually fold in oil till blended.
  3. NOTES : To serve, lightly combine noodle mix, sesame seeds, shrimp, onion, celery, mushrooms, and Soy Dressing. Salad
