Asian Noodles With Ginger Cilantro Sauce

Ingredientes

  • 1 pkt Fresh oriental-style water noodles or possibly, (12-oz) linguine
  • 3 Tbsp. Oriental sesame oil
  • 2 1/2 Tbsp. Chopped peeled fresh ginger
  • 1 sm Jalapeno chili, seeded
  • 1 c. Fresh cilantro leaves, (packed)
  • 1 Tbsp. Soy sauce
  • 1 Tbsp. Rice vinegar
  • 1 Tbsp. Creamy peanut butter
  • 3 Tbsp. Canned chicken broth, (or possibly more)

Direcciones

  1. Cook noodles in large pot of boiling salted water till just tender but still hard to bite. Drain noodles. Rinse with cool water; drain well. Transfer to large bowl. Toss with 1 Tbsp. sesame oil.
  2. With processor running, drop ginger and chili through feed tube and mince. Add in cilantro, soy sauce, vinegar, peanut butter, 3 Tbsp. broth and remaining 2 Tbsp. sesame oil. Process till mix is almost smooth, adding more broth if necessary. Season to taste with salt and pepper. Add in sauce to noodles and toss.
  3. Serves 4.
