Asian Salad with Noodles

I had leftover pasta (spaghetti ) and came up with this dinner salad with a very nice dressing. My family loved it.

Ingredientes

  • Dressing
  • 3 tbsp creamy peanut butter
  • 2 tbsp lite soy sauce
  • 2 tbsp rice vinegar
  • ½ tsp chili sauce – Chinese (prepared)
  • 1 tsp finely minced ginger
  • 1 tsp finely minced garlic
  • 2 tbsp toasted sesame oil
  • 1 tsp granulated sugar
  • Salad Ingredients
  • 1 head of Romaine – washed & leaves torn
  • 4 scallions – sliced diagonally
  • ½ ea of yellow, red and orange pepper - sliced diagonally,
  • 1 ½ c cold spaghetti – cut
  • ½ c toasted cashews or peanuts - optional garnish
  • 3 tbsp toasted sesame seeds - optional garnish

Direcciones

  1. Dressing - Whisk above ingredients & let stand at least one hour. May be thinned with 2 tbsp water if necessary.
  2. 2.In large bowl, add greens.
  3. Add spaghetti & ½ of the dressing. Toss gently ensuring greens & noodles are coated. well.
  4. Divide evenly on 4 plates
  5. Divide evenly sweet peppers & scallions. Drizzle lightly with remaining dressing.
  6. Serve with nuts & seeds on the side.
