%20don't%20have%20air%20conditioning%20up%20here%20in%20the%20Northwest.%20%20Therefore,%20the%2090%20degree%20temperatures%20we've%20been%20getting%20have%20made%20it%20pretty%20miserable%20in%20the%20house.%3C/p%3E%3Cp%3EAnd%20it%20makes%20me%20not%20want%20to%20cook.%20%20Shocking,%20isn't%20it?%3C/p%3E%3Cp%3EMy%20dear%20friend,%20Diane,%20saved%20me%20though.%20%20She%20served%20these%20amazing%20goodies%20at%20our%20last%20book%20club%20get%20together.%20%20I%20was%20one%20bite%20in%20when%20I%20asked%20for%20the%20recipe.%20%20These.%20%20Are.%20%20Amazing.%3C/p%3E%3Cp%3EThey're%20cool,%20crisp,%20and%20fresh.%20%20They%20have%20a%20great%20sauce%20with%20just%20the%20right%20amount%20of%20kick%20to%20it.%20%20%20And%20best%20of%20all:%20%20No%20cooking%20required.%20%20No%20oven,%20stove,%20crockpot,%20or%20open%20flames%20required.%3C/p%3E%3Cp%3EHere's%20what%20you%20need%20to%20gather:%3C/p%3E%3Cp%3ESpinach,%20green%20onions,%20basil,%20bean%20sprouts,%20shrimp%20meat,%20garlic,%20ginger,%20rice%20vinegar,%20sesame%20oil,%20toasted%20sesame%20seeds,%20and%20soy%20sauce.%3C/p%3E%3Cp%3EYou'll%20also%20need%20to%20get%20spring%20roll%20skins%20(Banh%20Trang).%3C/p%3E%3Cp%3EMost%20larger%20markets%20carry%20these%20in%20their%20ethnic%20food%20aisles.%20%20You%20can%20also%20head%20to%20your%20local%20Asian%20market%20to%20pick%20some%20up.%20%20Make%20sure%20you%20shop%20around%20and%20try%20other%20fun%20stuff%20while%20you're%20there;%20there%20are%20some%20amazing%20flavors%20to%20find.%3C/p%3E%3Cp%3EFirst,%20you'll%20want%20to%20prep%20your%20veggies.%20%20Tear%20off%20individual%20basil%20leaves%20and%20take%20the%20stems%20off%20of%20your%20spinach.%20%20Cut%20your%20green%20onions%20into%203%20inch%20pieces.%3C/p%3E%3Cp%3ENext%20throw%20together%20your%20sauce.%20%20In%20a%20blender%20or%20food%20processor%20combine%20the%20soy%20sauce,%20rice%20vinegar,%20sesame%20oil,%20toasted%20sesame%20seeds,%20garlic,%20and%20ginger.%20%20Give%20it%20a%20good%20pulsing%20to%20combine.%20%20This%20stuff%20is%20absolutely%20heavenly%20and%20I'm%20already%20trying%20to%20figure%20out%20a%20thousand%20other%20ways%20to%20use%20it.%20%20The%20original%20recipe%20also%20calls%20for%20red%20pepper%20flakes%20and%20I%20highly%20recommend%20using%20them.%20%20Just%20make%20sure%20you%20remember%20to%20buy%20them%20when%20you're%20lazily%20shopping%20in%20the%20cool%20grocery%20store.%3C/p%3E%3Cp%3EI%20wish%20you%20could%20smell%20this%20right%20now.%20%20Yum.%3C/p%3E%3Cp%3ENow%20you'll%20want%20to%20grab%20a%20vessel%20large%20enough%20to%20allow%20your%20spring%20roll%20skins%20to%20lay%20flat.%20%20I%20like%20to%20use%20my%20skillet.%20%20It's%20nice%20and%20big.%20%20Fill%20it%20with%20about%20an%20inch%20of%20water%20and%20you're%20ready%20to%20begin.%20%20I've%20found%20that%20working%20with%202%20sheets%20of%20the%20skins%20is%20easiest%20for%20me.%20%20Place%20one%20sheet%20in%20the%20water%20and%20submerge.%20%20Diane%20taught%20me%20that%20if%20you%20flip%20the%20second%20sheet%20to%20the%20opposite%20side%20and%20submerge%20it,%20it%20will%20keep%20the%20two%20sheets%20from%20melting%20together%20in%20the%20water.%3C/p%3E%3Cp%3EIt%20only%20takes%20about%2020-30%20seconds%20for%20the%20skins%20to%20soften%20and%20be%20ready%20to%20go.%20%20You%20could%20also%20dip%20them%20for%20about%2010%20seconds%20and%20place%20them%20on%20a%20damp%20dish%20towel%20and%20wait%20for%20them%20to%20soften.%20%20I%20like%20to%20just%20let%20them%20sit%20in%20the%20water%20until%20soft.%20%20Pull%20one%20out%20and%20give%20it%20a%20little%20blot%20with%20a%20paper%20towel.%3C/p%3E%3Cp%3EI%20spread%20mine%20out%20on%20my%20favorite%20cutting%20board.%20%20It's%20actually%20there%20in%20this%20picture;%20I%20think%20you%20have%20to%20squint%20and%20tilt%20your%20head%20sideways%20to%20see%20it%20though.%20%20It's%20a%20hard%20thing%20to%20photograph,%20I%20discovered.%3C/p%3E%3Cp%3EFirst,%20put%20a%20layer%20of%20spinach%20in%20the%20middle%20not%20quite%20to%20the%20sides.%3C/p%3E%3Cp%3ENext%20add%20the%20basil.%20%20For%20some%20reason,%20the%20basil%20I%20bought%20was%20really%20strong.%20%20If%20you%20aren't%20a%20fan%20of%20basil%20you%20can%20leave%20it%20out%20or%20just%20add%20it%20sparingly.%20You%20could%20even%20substitute%20some%20cilantro%20for%20a%20Vietnamese%20flavor.%3C/p%3E%3Cp%3ENext%20comes%20the%20green%20onion.....%3C/p%3E%3Cp%3Ethen%20the%20magic%20sauce.%20%20My%20family%20likes%20theirs%20with%20a%20bit%20of%20sauce.%20%20I%20like%20to%20be%20more%20generous%20when%20making%20mine.%20%20It's%20just%20how%20I%20roll.%20%20(Get%20it?%20%20How%20I%20roll??%20%20Sorry...carry%20on.)%3C/p%3E%3Cp%3EAdd%20some%20bean%20sprouts%20(or%20you%20could%20use%20julienned%20carrots%20if%20you're%20not%20a%20bean%20sprout%20fan).%3C/p%3E%3Cp%3EAnd%20last,%20but%20not%20least,%20add%20on%20the%20shrimp%20meat.%20%20Diane%20has%20also%20used%20smoked%20salmon%20with%20yummy%20results.%3C/p%3E%3Cp%3ENow,%20shake%20your%20head%20when%20you%20remember%20that%20it's%20easiest%20to%20start%20folding%20from%20the%20bottom%20and%20quickly%20give%20your%20board%20a%20turn.%20%20Then%20bring%20the%20bottom%20of%20the%20skin%20up%20towards%20the%20middle.%3C/p%3E%3Cp%3EFold%20each%20side%20in...%3C/p%3E%3Cp%3Eand%20fold%20tightly%20until%20it's%20all%20rolled%20up.%20%20Voila!%3C/p%3E%3Cp%3EYou%20could%20make%20these%20like%20I%20did%20for%20a%20light%20summer%20dinner,%20or%20like%20Diane%20does%20as%20a%20tasty,%20fresh%20appetizer.%20%20Hope%20you%20enjoy%20these%20as%20much%20as%20I%20do...but%20beware---we%20are%20finding%20them%20addicting!%20%20%20Enjoy.%3C/p%3E%3Cp%3EAsian%20Spinach%20Wraps%3C/p%3E%3Cp%3ESpring%20Roll%20Skins%3C/p%3E%3Cp%3EFor%20the%20sauce,%20blend%20sesame%20seeds,%20soy%20sauce,%20rice%20vinegar,%20sesame%20oil,%20ginger,%20red%20pepper,%20and%20garlic%20together%20in%20blender%20or%20food%20processor.%3C/p%3E%3Cp%3ESoak%20wrap%20skins%20in%20water%20(1%20to%202%20at%20a%20time)%20for%20about%2020-30%20seconds%20or%20until%20soft%20and%20pliable.%20%20Spread%20out%20on%20work%20surface.%20%20Place%20spinach,%20basil,%20green%20onion,%20sauce,%20bean%20sprouts,%20and%20shrimp%20meat%20in%20a%20row%20along%20the%20center.%20%20Roll%20up%20burrito%20style;%20bottom%20up%20toward%20the%20middle,%20sides%20in,%20and%20then%20tightly%20roll%20until%20completely%20rolled%20up.%20%20Serve%20with%20extra%20sauce%20for%20dipping%20if%20desired.%20%20Enjoy!%20:)%3C/p%3E){kind=link}
