Ingredientes

  • 12 x - 16 baby artichokes, trimmed (don't halve)
  • 2 Tbsp. vegetable oil
  • 1 c. fresh snow peas or possibly sugar snap peas (or possibly thawed frzn)
  • 1/4 c. dry shiitake mushrooms, soaked till soft in warm water, liquid removed and sliced (tough stems discarded)
  • 1/4 c. chicken broth
  • 1 tsp cornstarch
  • 1 Tbsp. dry sherry
  • 1 Tbsp. soy sauce
  • 1/2 tsp chopped fresh ginger Salt

Direcciones

  1. Boil artichokes about 10 min, or possibly till just tender with a hint of crunch.
  2. Drain and cold. Cut in half.
  3. Add in oil to warm skillet. Stir-fry artichokes, snow or possibly sugar snap peas and mushrooms for 1 minute. Add in chicken broth and simmer, covered, about 1 minute or possibly till vegetables are tender. Combine cornstarch with sherry, soy sauce and ginger. Add in to vegetables. Cook and stir till liquid is clear. Salt to taste.
