Receta Asparagus and Avocado Salad, bad dogs
Mon mari’s two favorite A’s – asparagus and avocado. If I could have worked in an artichoke….
One of the problems / benefits of eating seasonally is consuming vast quantities of whatever is current in a relatively short span of time.
How can one go wrong over-indulging in vegetables?
Especially the ‘A’s….
Yes, I know…. Avocados are fruits, so we are overindulging in fruits, too.
The strawberries have been wonderful.
We buy both strawberries and asparagus from the same farm within minutes of being picked. I know this because we buy them right of the wheel barrow coming from the garden.
Asparagus and Avocado Salad
Total time: 20 minutes
Ingredients:
8oz (240gr) asparagus, green or white, trimmed and roll cut in 1 inch (2.5 cm) lengths.
- 2 green garlic, thickly sliced, including green tops
- 2 tsp olive oil
- 1 small avocado or 1/2 of a large
- Vinaigrette:
- 1 tsp Dijon-style mustard
- 1 tsp fresh tarragon, chopped
- 2 tsp fresh chives, chopped
- 1 1/2 tbs tarragon white wine vinegar
- 3 tbs good, salad olive oil
Instructions:
Make Vinaigrette: Combine all ingredients in a medium bowl and whisk well to combine.
Heat oil in a medium skillet
Add asparagus, green garlic and stir-fry for 4 – 5 minutes, just until crisp-tender.
Add vegetables to vinaigrette, stir well and let marinate for 10 minutes.
To Serve:
Remove avocado from shell and slice.
Arrange avocado slices on 2 plates. add asparagus salad and serve.
It’s evening here…. A beautiful, clear, calm evening, as usual.
Unfortunately, the days have been miserable: cold, high winds and violent downpours.
It really doesn’t seem fair.
And it didn’t really seem fair that the girls (dogs) managed to go walkabout right in the middle of it all.
We had managed to get our noon work routine and walk in between rains and I was trying to get through my French homework (back to school this week) when the dogs wanted to go, as usual.
They don’t like to waste precious walk / play time on things like peeing and pooping so they always want to go back out about 2 seconds after we come in from our walk.
I let them out and went back to my homework.
About 20 minutes later I realized two things: it was starting to rain and the dogs were very, very quiet.
I went to let them in.
They were gone.
The little gate to my herb garden had been left open by someone who shall remain nameless.
They were nowhere in sight, the wind was coming up and it was starting to rain, again.
I ran back to get my jacket and heard the phone. It was my French neighbor, from up on the hill calling.
My dogs were in her garden.
I grabbed the leashes and went to fetch them home.
In the rain.
They weren’t even happy to see me.
