Ingredientes

  • 1 lb thin asparagus trimmed peeled and very thinly sliced on the diagonal
  • 8 x red radishes halved lengthwise and thinly sliced
  • 8 ounce mushrooms stemmed and thinly sliced
  • 2 bn watercress stemmed and coarsely minced
  • 1 bn chives cut into 1/2 .inch pcs
  • 1 c. (3 ounces) asiago cheese shaved with a vegetable peeler dressing:
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. fresh orange juice
  • 1 Tbsp. balsamic vinegar
  • 3 Tbsp. extra virgin olive oil
  • 1 tsp sweet warm mustard
  • 1 x salt and freshly grnd pepper

Direcciones

  1. In a large bowl combine asparagus radishes mushrooms watercress chives and cheese.
  2. In a small bowl whisk dressing ingredients together till well blended. Toss with salad.
  3. Taste and adjust for seasoning.
