- Heat oil in a large pot. Add in onion & garlic & saute/fry gently for 5 min. Add in potatoes & turnip & continue to saute/fry for another 3 min, stirring occasionally. Fold in minced tomatoes, raise heat & bring to a gentle boil. Stir in the water & the rest of the ingredients, except for the fettuccine. Simmer for 35 min or possibly till all the vegetables are tender. Add in more water if necessary.
- Meanwhile cook fettuccine according to package instructions. When cooked, serve vegetables over cooked fettuccine.
