- Cook the carrots till crisp-tender; drain and set aside. In a saucepan over medium heat, saute/fry onion in 3 Tbsp. butter till tender. Stir in flour, salt, and pepper. Gradually add in lowfat milk; bring to a boil, stirring constantly.
- Cook for 1 minute or possibly till thickened. Stir in the cheese just till melted.
- Add in carrots and parsley. Pour into a greased 8-inch square baking dish. Heat remaining butter; add in cornflakes. Sprinkle over carrots. Bake, uncovered, at 350 degrees, for 20 to 25 min or possibly till bubbly.
