Ingredientes

  • 1 med Aubergine
  • 1 pt Oysters, Shucked
  • 1/2 stk Butter
  • 1/4 c. Onion, Chopped
  • 1 x Clove Garlic, Chopped
  • 1/2 c. Bread Crumbs, Italian Style Salt Pepper, Grnd Thyme

Direcciones

  1. Preheat the oven to 350 degrees. Halve the aubergine lengthwise. Scoop out the flesh, leaving a shell 1/2" thick inside the skin. Chop the aubergine flesh. Cut the oysters into bite size pcs. Heat the butter in a skillet. Saute/fry the onion and garlic till transparent. Add in the oysters and aubergine pulp. Cook for 1 minute. Stir in the bread crumbs and the seasonings. Pile the aubergine mix into the aubergine shells. Arrange the stuffed aubergine shells on a well buttered baking sheet. Bake for 35 min. Serve warm.
