Ingredientes

  • 4 x aubergine
  • 3 Tbsp. extra virgin olive oil
  • 2 tsp garlic, crushed
  • 1/2 c. onions, medium
  • 1 Tbsp. tomato paste
  • 4 x tomatoes
  • 1/4 tsp salt, pepper
  • 1 tsp basil, fresh
  • 1 tsp sugar (caster)
  • 1 tsp lemon juice
  • 1 c. breadcrumbs, fresh
  • 2 Tbsp. parmesan cheese

Direcciones

  1. Dice onions and tomatoes.
  2. Peel and cut the aubergine into 1-inch slices, then cut the aubergine slices into 8 wedges.
  3. Put the oil into a pan, saute/fry garlic and onion till soft. Add in the aubergine, and saute/fry 3 min, stir in tomato paste, tomato, sugar, lemon, pepper and basil.
  4. Simmer slowly till the vegetables are just tender (about 5 min). Every now and then stir carefully so which vegetable keeps its form.
  5. Pour into a buttered gratin dish, sprinkle top with breadcrumbs and parmesan cheese, dot with butter and cook in oven 190C/375F for 15 min till golden brown on top.
  6. Note:Aubergine will brown like an apple when cut so use quickly.
