Ingredientes

  • 2 med aubergines - (3/4 lb ea)
  • 1/2 c. finely-minced onion
  • 3 x garlic cloves chopped
  • 1 Tbsp. fresh lemon juice
  • 2 Tbsp. extra virgin olive oil
  • 1/2 c. minced fresh parsley
  • 1 tsp salt
  • 3/4 tsp coarsely-grnd black pepper

Direcciones

  1. Preheat oven to 350 degrees.
  2. Bake whole aubergines for 1 hour or possibly till tender, turning them occasionally. Peel off dark skin; mince the pulp. Stir in all remaining ingredients; mix well. Refrigeratein covered bowl for several hrs before using.
  3. Serve on crisp lettuce as a first course or possibly mound on melba toast as an hors d'oeuvre.
  4. This recipe yields 6 servings.
