Aubergine Chili With Couscous

Ingredientes

  • 1 lrg Aubergine
  • 1 x Carrot minced
  • 1 x onion minced
  • 1 x green pepper minced
  • 1 c. garbanzo beans cooked
  • 1 c. pinto beans cooked
  • 6 x tomatoes minced
  • 1/2 c. picante sauce
  • 1 c. water
  • 3/4 c. couscous
  • 3 Tbsp. chili pwdr
  • 2 Tbsp. parsley minced
  • 2 Tbsp. cilantro minced

Direcciones

  1. Peel aubergine and cut into 1-inch chunks. Put all ingredients in large kettle.
  2. Heat to a simmer and cook uncovered, stirring occasionally, till aubergine istender, 45-50 min. Add in water if too thick.
  3. Salt and pepper to taste.
  4. NOTES : I used a can of Rotel tomatoes and a can of diced tomatoes in place of the fresh ones, and the recipe was delicious. My only difficulty was finding canned tomatoes with relatively little added salt.
