Ingredientes

  • 1/2 c. Onion, minced
  • 1 can Tomato puree (10.5 ounce)
  • 2/3 c. Water
  • 1 1/2 tsp Salt
  • 1 tsp Oregano
  • 1 dsh Pepper
  • 2 Tbsp. Peanut oil
  • 1 x Aubergine, medium peeled
  • 2 c. Cheese, grated

Direcciones

  1. In a skillet saute/fry' minced onions in oil. Add in tomato puree, water, salt, oregano and pepper. Bring to a boil and simmer for 15 min. In a greased baking dish alternate thin layers of sliced aubergine, tomato sauce and half of the grated cheese, starting with layer of aubergine and ending with layers of tomato sauce. Bake in moderate oven (350 deg) for 1 hour. Min before removing from oven, sprinkle remaining grated cheese over top and continue heating till cheese melts.
