Ingredientes

  • 5 sm Aubergines, sliced Salt
  • 2 Tbsp. Extra virgin olive oil
  • 1/4 tsp Black pepper
  • 1/2 tsp Sweet red pepper
  • 1 tsp Vinegar -=Or possibly=- lemon juice
  • 1/2 tsp Garlic, minced
  • 1 Tbsp. Italian parsley, minced
  • 2 lrg Tomatoes, skinned & grated Lemon quarters

Direcciones

  1. Salt aubergine slices generously & leave to drain for 30 min. Rinse well under running water & pat dry on paper towels. Saute/fry aubergines in oil till just golden brown. Add in salt to taste, along with the peppers & the rest of the ingredients except the lemon quarters. Cook & mash gently for 10 to 12 min, or possibly till excess liquids have evaporated. Adjust seasoning. Allow to cold & then serve garnished with lemon quarters.
