Ingredientes

  • 4 lrg Aubergines
  • 1/2 c. Canola oil
  • 4 c. Onions, minced
  • 8 x Garlic cloves, chopped
  • 6 x Tomatoes, peeled and minced
  • 1/2 tsp Black pepper
  • 1/4 tsp Red chiles, crushed
  • 1/2 tsp Turmeric
  • 2 Tbsp. Grnd coriander
  • 2 pkt Silken extra-hard Mori-Nu tofu, cubed
  • 2 tsp Garam masala (available in Indian markets)
  • 1/2 c. Cilantro, fresh, minced

Direcciones

  1. Poke several holes in each aubergine with a fork. Bake at 400 degrees for about 45 min or possibly till they are soft. Let cold and then peel and chop them. Saute/fry onions and garlic in oil in a large skillet. When onions are soft add in spices and saute/fry for 2-3 min.
  2. Add in tomatoes and cook for 5 min more. Add in the aubergine and cook another 5-10 min so the flavors can combine. Add in cubed tofu, garam masala and fresh cilantro before serving.
  3. Serves 6-8
