%3C/p%3E%3Cp%3EOne%20of%20my%20former%20clients%20and%20a%20dear%20friend%20called%20me%20yesterday%20and%20she%20sounded%20AWFUL.%20I%20was%20so%20touched%20that%20in%20the%20throes%20of%20the%20flu%20she%20was%20calling%20to%20check%20on%20me.%3C/p%3E%3Cp%3EWhen%20I%20was%20very%20young%20and%20felt%20bad,%20my%20Nonna%20went%20straight%20for%20the%20soup%20pot.%20One%20of%20my%20favorites%20was%20her%20Avgolemono-%20a%20rich,%20creamy%20chicken%20broth%20thickened%20with%20egg%20and%20lemon.%20Along%20with%20her%20Stracciatella%20her%20reputation%20as%20a%20healer%20was%20sealed.%3C/p%3E%3Cp%3EIt%20was%20only%20years%20later%20when%20I%20was%20older%20that%20I%20found%20out%20that%20my%20Nonna's%20soup%20wasn't%20an%20Italian%20cure-all.%20It%20was%20actually%20Greek!%20%20No%20matter%20where%20it%20originated,%20this%20is%20comfort,%20and%20love,%20and%20healing%20in%20a%20cup.%3C/p%3E%3Cp%3EI've%20seen%20%22fancier%22%20versions%20with%20chicken%20pieces%20and%20vegetables%20thrown%20in,%20but%20this%20is%20simple%20and%20basic.%20The%20only%20concession%20I%20make%20to%20modern%20times%20is%20using%20my%20stand%20mixer%20to%20beat%20the%20eggs-%20I%20think%20it%20makes%20for%20a%20thicker,%20richer%20soup.%20I%20love%20this%20soup%20hot,%20but%20traditionally%20it%20can%20be%20served%20either%20hot%20or%20cold%3C/p%3E%3Cp%3EAvgolemono%3C/p%3E%3Cp%3E6%20cups%20chicken%20broth-%20preferably%20homemade%3C/p%3E%3Cp%3E3/4%20cup%20orzo%3C/p%3E%3Cp%3E3%20large%20eggs%3C/p%3E%3Cp%3Egenerous%201/4%20cup%20fresh%20lemon%20juice%3C/p%3E%3Cp%3Efinely%20grated%20zest%20of%201%20lemon%3C/p%3E%3Cp%3Esalt%20and%20white%20pepper%3C/p%3E%3Cp%3E2-3%20tblsp%20chopped%20fresh%20parsley%20or%20dill%3C/p%3E%3Cp%3EIn%20a%20large%20saucepan,%20bring%20broth%20to%20a%20boil.%20Add%20orzo,%20reduce%20heat,%20cover%20and%20simmer%20till%20tender%20(10-15%20minutes).%20In%20the%20meantime,%20beat%20eggs%20till%20light%20and%20thick,%20then%20whip%20in%20lemon%20juice%20and%20zest.%20When%20orzo%20is%20cooked,%20pour%20about%201/2%20cup%20of%20hot%20broth%20into%20eggs%20with%20mixer%20running-%20beat%205%20seconds%20and%20add%20another%201/2%20cup%20the%20same%20way.%20Add%20one%20more%201/2%20cup%20and%20beat%205%20more%20seconds.%20Skim%20off%20any%20foam%20and%20pour%20eggs%20into%20saucepan%20with%20orzo%20and%20broth.%20Heat,%20stirring%20till%20thickened%20and%20creamy-%20DO%20NOT%20BOIL-%20eggs%20will%20curdle.%20Remove%20from%20heat%20and%20stir%20in%20chopped%20parsley%20or%20dill.%3C/p%3E%3Cp%3EI%20made%20some%20tarts%20for%20a%20fundraiser%20this%20week%20and%20had%20some%20pastry%20dough%20left.%20Rolled%20out%20and%20filled%20with%20a%20honey%20and%20lemon%20infused%20ground%20nut%20filling,%20it%20made%20a%20lovely%20sweet%20treat%20to%20send%20along%20with%20the%20soup%3C/p%3E%3Cp%3ENut%20Wedges%3C/p%3E%3Cp%3E1%20double%20crust%20recipe%20sweet%20pastry%20dough-%20see%20below%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20degrees%3C/p%3E%3Cp%3EDivide%20dough%20in%20half%20and%20roll%20out%20each%20half%20to%20a%2010-12%22%20round%20(roll%20out%20between%202%20sheets%20of%20lightly%20floured%20waxed%20paper).%20Transfer%201%20round%20to%20a%20parchment%20lined%20cookie%20sheet.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20combine%20nuts,%20sugar,%20honey,%20cinnamon%20and%20lemon%20juice.%20Spread%20on%20%20the%20pastry%20round%20which%20is%20on%20the%20cookie%20sheet%20leaving%20a%20border.%20Top%20with%20the%20other%20round,%20press%20%20edges%20to%20seal,%20and%20trim%20with%20a%20fluted%20pastry%20cutter.%20Prick%20top%20with%20a%20fork%20and%20brush%20lightly%20with%20milk.%20Bake%20for%2020-25%20minutes%20till%20lightly%20golden.%20Cool%20on%20a%20wire%20rack%2010%20minutes%20before%20cutting%20in%20wedges%20with%20a%20pizza%20cutter.%20Melt%20chips%20and%20shortening%20together%20(I%20do%20it%20in%20a%20ziplock%20bag%20in%20the%20microwave)%20Snip%20the%20corner%20of%20the%20bag%20and%20pipe%20onto%20wedges%3C/p%3E%3Cp%3EAs%20Always,%3C/p%3E%3Cp%3EBuon%20Cibo,%20Buon%20Amici,%3C/p%3E%3Cp%3EPattie%20and%20Allie%3C/p%3E){kind=link}
