Ingredientes

  • 100 gm Green grapes, halved and pips removed
  • 1 x Cox's apple, cored
  • 1/2 x Lemon, juice of
  • 2 x Blood orange segments
  • 2 x Avocados, ripe
  • 1 tsp Mint, minced Acidulated water
  • 3 Tbsp. White wine vinegar
  • 6 Tbsp. Extra virgin olive oil
  • 4 Tbsp. Double cream
  • 2 Tbsp. Minced mint, shredded fine
  • 2 tsp Caster sugar Salt
  • 1 sprg mint

Direcciones

  1. Core and dice the apple into a bowl containing a little acidulated water. Remove and place into a clean bowl. Slice the avocado and proceed as with the apple.
  2. Add in the grapes to the apple, the minced mint and the orange juice, mix in carefully.
  3. For the dressing place the salt and caster sugar in a bowl and mix with half the wine vinegar till the sugar has dissolved.
  4. Whisk in a little extra virgin olive oil, followed by the rest of the vinegar, finally whisk in the remaining extra virgin olive oil.
  5. Whisk in the mint and double cream.
  6. Place the avocado and fruit into a glass and pour over the dressing.
  7. Garnish with a sprig of mint and serve immediately.
