Ingredientes

  • A little butter, for greasing
  • 6 x Chicken breasts, cooked, skinned, boned and cubed
  • 250 gm Soft cream cheese, (8oz)
  • 300 ml Double cream, ( 1/2 pint)
  • 1/2 tsp Salt
  • 1/2 tsp Grnd black pepper
  • 4 x Ripe avocados
  • 2 x Ripe tomatoes, skinned and de-seeded
  • 2 x Green chillies
  • 1 x Onion, minced finely
  • 2 Tbsp. Extra virgin olive oil
  • 1 x Lime or possibly lemon, juice of
  • 1 Tbsp. Mayonnaise
  • 25 gm Minced pecan nuts or possibly flaked almonds, (1oz)

Direcciones

  1. Butter a 23cm (9-inch) ring mould. Mix the cubed chicken with the cream cheese, cream and half the salt and pepper.
  2. Cut two of the avocados in half and remove the flesh with a Tbsp.. Puree the avocado flesh, tomatoes, chillies, onion, extra virgin olive oil and half the lime or possibly lemon juice in a food processor.
  3. Press half the chicken mix into the ring mould, spoon on the avocado mix and then the remaining chicken mix. Press with the back of a wooden spoon to ensure there are no cavities. Cover with cling film and chill for about 2 hrs.
  4. Run a spatula round the edge of the dish to loosen the mix without breaking it and then invert the mould on to a serving dish. Halve and mash the remaining avocados with the mayonnaise and the remaining juice, salt and pepper and cover the chicken ring with this mix.
  5. Garnish with the minced pecan nuts or possibly almonds and serve immediately.
