.%3C/p%3E%3Cp%3EYou%20see,%20she%20has%20graduated%20from%20the%20CIA%20in%20New%20York%20as%20pastry%20chef%20so%20she%20is%20partial%20to%20anything%20that%20can%20be%20shoveled%20into%20a%20hot%20oven.%20This%20doesn't%20mean%20that%20she%20bakes%20only%20sweets,%20looks%20like%20that%20they%20are%20part%20of%20her%20mother's%20duties;%20at%20least%20this%20seems%20to%20be%20true%20for%20the%20daily%20tray%20of%20brownies%20that%20Nelly%20keeps%20beside%20her%20to%20make%20us%20more%20jealous.%3C/p%3E%3Cp%3EJust%20because%20of%20this%20I%20asked%20her%20to%20bake%20some%20brownies%20for%20us%20but...%20well,%20she%20is%20unpredictable%20so%20let's%20read%20what%20she%20came%20up%20with.%3C/p%3E%3Cp%3EHello%20Recipe%20Taster%20readers!%20I'm%20Nelly,%20food%20blogger%20over%20at%20Cooking%20with%20Books.%20To%20say%20I%20am%20honored%20to%20be%20gracing%20the%20pages%20of%20Recipe%20Taster,%20would%20be%20an%20understatement.%20I%20met%20Alessio%20during%20one%20of%20the%20Chef2Chef%20chats%20this%20winter%20and%20of%20course%20had%20to%20start%20following%20immediately.%20His%20posts,%20always%20so%20well%20thought%20out,%20the%20words%20precise%20and%20the%20photography%20impeccable,%20at%20times%20intimidate%20me.%20He%20has%20a%20method,%20a%20vision%20for%20each%20of%20his%20posts%20(or%20so%20it%20seems!)%20and%20I,%20on%20the%20other%20hand,%20just%20like%20to%20throw%20things%20together%20and%20hope%20for%20the%20best!%20If%20you%20haven%E2%80%99t%20experienced%20Cooking%20with%20Books,%20head%20on%20over%20there%20after%20reading%20this%20post%20and%20see%20what%20I%20mean%20by%20%E2%80%9Cthrowing%20things%20together%E2%80%9D!%3C/p%3E%3Cp%3EIt%20took%20me%20a%20good%20two%20weeks%20to%20figure%20out%20what%20I%20wanted%20to%20guest%20post%20for%20Alessio.%20There%20was%20no%20way%20I%20could%20ever%20be%20as%20precise%20and%20analytical%20as%20my%20lovely%20Italian%20friend,%20but%20I%20did%20want%20to%20have%20one%20thing%20in%20common:%20great%20flavor.%20This%20post%20had%20to%20be%20bursting%20with%20flavors,%20layered%20upon%20in%20each%20coat.%20Thinking%20about%20layers%20made%20me%20somehow%20think%20of%20breading%20stations%20and%20how%20you%E2%80%99re%20supposed%20to%20season%20each%20step;%20this%20is%20how%20flavor%20is%20built.%20Seasoning,%20tasting%20and%20re-seasoning.%20Although%20a%20simple%20recipe,%20the%20following%20is%20a%20prime%20example%20of%20what%20a%20few%20basic,%20fresh%20ingredients%20can%20achieve.%3C/p%3E%3Cp%3EFinally!%20Our%20Avocado%20trees%20have%20decided%20to%20grace%20us%20with%20their%20babies:%20plump,%20buttery%20avocados%20are%20now%20dangling%20from%20the%20braches,%20waiting%20to%20be%20picked.%20After%20tasting%20the%20first%20avocados%20of%20the%20season,%20I%20decided%20to%20take%20them%20to%20the%20next%20level,%20adding%20a%20crispy%20texture%20to%20them.%20Avocado%20fries%20aren%E2%80%99t%20a%20new%20thing,%20and%20were%20showcased%20on%20last%20seasons%E2%80%99%20Top%20Chef;%20the%20rage%20for%20avocado%20fries%20started%20and%20now%20you%20can%20see%20them%20as%20side%20dishes,%20on%20sandwiches%20and%20fanned%20over%20salads.%3C/p%3E%3Cp%3EKeeping%20with%20seasonality,%20but%20this%20time%20something%20that%20the%20Dominican%20Republic%20does%20not%20produce%20but%20imports%20from%20the%20US:%20peaches!%20They%E2%80%99re%20gorgeous%20gems%20that%20I%20wish%20we%20did%20produce,%20but%20sadly%20we%20don%E2%80%99t.%20Ultimately,%20I%20am%20jealous%20of%20everyone%20that%E2%80%99s%20picking%20a%20juicy%20peach%20of%20the%20tree.%20This%20didn%E2%80%99t%20keep%20me%20from%20trying%20to%20bring%20peaches%20into%20my%20home,%20no%20sir!%20I%20scored%20the%20grocery%20stores%20and%20markets,%20finally%20to%20find%20them!%20They%20smelled%20like%20summer%20and%20brought%20back%20memories;%20nothing%20is%20better%20than%20biting%20into%20a%20peach%20and%20having%20the%20juices%20run%20down%20your%20hands.%3C/p%3E%3Cp%3EAvocados%20and%20Peaches,%20a%20love%20affair%20of%20the%20Caribbean%20and%20North%20American%20seasons,%20won%20over.%20Leave%20it%20to%20me%20to%20make%20something%20healthy%20into%20a%20deep-fried,%20indulgent%20snack%20or%20side%20dish.%20Sure,%20Avocados%20are%20nature%E2%80%99s%20butter,%20but%20imagine%20that%20butter%20deep%20fried%20with%20an%20outer%20shell%20of%20crispy%20panko?%20Imagine%20then%20dipping%20it%20in%20a%20sweet%20and%20spicy%20peach%20sauce.%20I%E2%80%99ll%20stop%20teasing,%20here%E2%80%99s%20the%20recipe:%3C/p%3E%3Cp%3EAvocado%20Fries%20with%20Sweet%20&%20Spicy%20Peach%20Dipping%20Sauce%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EStir%20peach%20puree,%20sriracha%20and%20honey%20together.%20Season%20with%20salt%20and%20pepper%20and%20reserve.%3C/p%3E%3Cp%3EIn%20a%20medium%20saucepan,%20heat%20about%203%20inches%20of%20oil.%20The%20oil%20should%20be%20350F%20for%20ideal%20frying%20temperature.%3C/p%3E%3Cp%3ESet%20up%20a%20breading%20station,%20placing%20flour%20in%20first%20bowl;%20in%20the%20second%20bowl%20whisk%20milk%20with%20salt;%20third%20bowl%20fill%20with%20panko.%20Season%20each%20step%20with%20salt%20and%20pepper!%20This%20is%20the%20order%20in%20which%20you%20will%20coat%20your%20avocado%20slices.%3C/p%3E%3Cp%3ECut%20avocado%20open%20and%20remove%20pit%20and%20skin.%20Slice%20to%20%C2%BD%20to%20%C2%BE%20of%20an%20inch%20thick,%20depending%20on%20what%20size%20you%20want%20your%20fries%20to%20be.%20The%20thicker%20cut%20the%20better,%20as%20for%20more%20control%20and%20sturdiness%20as%20a%20%E2%80%9Cfry%E2%80%9D%20and%20much%20easier%20to%20dip!%3C/p%3E%3Cp%3EDip%20slices%20into%20flour%20and%20coat;%20pass%20on%20to%20milk%20and%20finish%20coating%20with%20panko.%20Place%20on%20parchment-lined%20tray%20while%20you%20finish%20breading.%3C/p%3E%3Cp%3ECarefully%20fry%20each%20avocado%20slice%20until%20golden%20brown;%20don%E2%80%99t%20crowd%20that%20pot%20with%20slices,%20frying%20only%20a%20few%20at%20a%20time%20to%20keep%20oil%20at%20ideal%20frying%20temperature.%20%20Drain%20the%20excess%20oil%20on%20paper%20towels.%3C/p%3E%3Cp%3EServe%20with%20a%20side%20of%20Spicy%20Peach%20Dipping%20Sauce%20and%20enjoy!%3C/p%3E){kind=link}
