Baby Clams Steamed In Green Onion Broth

Ingredientes

  • 4 Tbsp. Extra virgin olive oil
  • 1 Tbsp. Minced garlic
  • 1 sm Onion peeled, sliced thin
  • 3 c. Clam juice
  • 1 c. White wine
  • 3 Tbsp. Lemon juice
  • 1 c. Parsley leaves - (packed)
  • 1 Tbsp. Honey Salt to taste Freshly-grnd black pepper to taste
  • 40 x Baby clams Grilled Garlic Bread see * Note

Direcciones

  1. Heat the oil in a large saucepan over medium-high heat till almost smoking and saute/fry the garlic till golden. Add in the onion and cook till soft. Add in the clam juice, wine and lemon juice and bring to a boil. Reduce heat and simmer for 10 min.
  2. Place the broth in a blender with the parsley, honey and salt and pepper to taste and process till pureed. Combine the broth and clams in a large saucepan over high heat and bring to a boil. Reduce heat, cover the pan and steam the clams till opened. Spoon into large bowls. Serve with Grilled Garlic Bread.
