Receta Baby Corn Rice
Makes a great recipe for school/office lunch.
Ingredients:
- Baby Corn – 6 to 8, finely chopped
- Rice – 1 cup
- Onion – 1, chopped
- Tomato – 1, chopped
- Ginger Garlic Paste – 1 tsp
- Green Chillies – 2 to 3, slit
- Cinnamon – 1
- Cardamom – 1
- Cloves – few
- Saunf – 1/4 tsp
- Mint Leaves – handful, chopped
- Coriander Leaves – handful, chopped
- Salt as per taste
- Oil as required
Method:
1. Heat oil in a pressure cooker.
2. Fry the cinnamon, clove, cardamom and saunf for 30 seconds.
3. Add green chillies, onions and tomatoes.
4. Saute well for 2 to 3 minutes.
5. Add ginger garlic paste and stir well.
6. After a minute, add the baby corn pieces and stir.
7. Add rice, mint leaves, coriander leaves and salt.
8. Pour 2 cups of water and pressure cook until 1 whistle.
9. Reduce flame to low and simmer for 10 minutes.
10. Remove and transfer to a serving bowl.
11. Serve.
