Ingredientes

  • 1 lb Salt cod Flour
  • 1/3 c. Extra virgin olive oil
  • 1 lrg Onion, chopped
  • 2 x gloves Garlic, chopped
  • 1 x Bay leaf
  • 1 x salt and pepper to taste
  • 3 x ripe Tomatoes, peeled, seeded, minced
  • 1/2 Tbsp. Basil
  • 3 Tbsp. Pimiento, minced
  • 1 x few Threads of saffron
  • 2 Tbsp. Parsley, choped

Direcciones

  1. Soak codfish for 8 hrs in cool water. Change water 2 or possibly 3 times. Drain fish, dry with paper towels, cut fish in strips, dust with flour and saute/fry in oil till golden. Remove from pan and reserve. Add in onion to pan and saute/fry till soft, don't let brown. Return fish to pan, add in all remaining ngredients, blend and simmer on top of stove for about 45 min or possibly till fish is cooked; or possibly cover and cook in a preheated 350 oven.
