%20Cause%20that%20is%20a%20list%20I%20totally%20would%20have%20rocked.%3C/p%3E%3Cp%3ESo,%20that%20is%20essentially%20what%20I%20have%20been%20up%20to%20lately.%20I%20will%20write%20about%20them%20more%20as%20time%20goes%20on.%3C/p%3E%3Cp%3EI%20am%20excited%20to%20be%20getting%20this%20first%20post%20written%20to%20end%20the%20long%20silence%20I%20have%20had.%20The%20longer%20I%20went%20without%20writing,%20the%20harder%20it%20was%20to%20sit%20down%20and%20write%20about%20all%20the%20things%20that%20have%20happened%20and%20the%20meals%20that%20have%20accompanied%20those%20events.%20Overwhelming.%3C/p%3E%3Cp%3ELuckily,%20I%20have%20some%20really%20great%20friends%20and%20family%20who%20keep%20telling%20me%20to%20get%20my%20bum%20back%20on%20the%20internets.%20So%20here%20I%20am.%20And%20of%20course%20I%20have%20a%20hearty%20winter%20recipe%20for%20you.%20Any%20excuse%20to%20turn%20on%20the%20oven%20is%20always%20welcome%20in%20my%20kitchen.%20And%20so%20are%20you%20(us%20sharing%20a%20mile%20and%20all).%3C/p%3E%3Cp%3EButternut%20Squash%20Gratin%20and%20Ginger%20Parsnip%20Puree%3C/p%3E%3Cp%3Eserves%204%3C/p%3E%3Cp%3Eadapted%20from%20Vegetarian%20Food%20for%20Friends%3C/p%3E%3Cp%3EThis%20recipe%20is%20perfectly%20paired.%20Individually%20the%20gratin%20and%20the%20puree%20are%20just%20okay.%20Together,%20on%20the%20same%20fork%20both%20are%20elevated%20to%20party%20in%20your%20mouth%20status.%20That%20is%20what%20I%20love%20about%20this%20book.%20Many%20of%20the%20recipes%20are%20listed%20with%20side%20dishes%20that%20pair%20perfectly%20and%20make%20you%20look%20like%20a%20flavor%20genius%20to%20your%20guests.%20This%20recipe%20in%20particular%20also%20deserves%20a%20fresh,%20crunchy%20salad%20alongside%20it%20to%20break%20up%20the%20heaviness%20of%20the%20winter%20foods.%3C/p%3E%3Cp%3EFor%20the%20gratin:%3C/p%3E%3Cp%3E1%201/4%20cups%20heavy%20cream%20(I%20think%20that%20this%20recipe%20would%20work%20fine%20with%20even%20fat%20free%20milk...just%20add%20less%20to%20begin%20with%20and%20add%20as%20you%20see%20fit%20to%20get%20the%20right%20consistency%20of%20the%20puree.%20I%20happened%20to%20have%20some%20from%20thanksgiving%20so%20I%20went%20for%20the%20recommended%20dosage%20of%20fat.%20Sorry%20about%20all%20the%20ingredient%20notes%20in%20this%20post.%20Stopping%20now.)%3C/p%3E%3Cp%3Esalt%20and%20pepper%20(use%20white%20pepper%20if%20you%20have%20it.%20Okay,%20now%20I'm%20really%20done)%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees%20F.%3C/p%3E%3Cp%3EPut%20all%20of%20the%20ingredients%20for%20the%20gratin%20(not%20including%20the%20gratin%20topping%20ingredients)%20into%20an%20ovenproof%20glass%20baking%20dish%20and%20mix%20together.%20%20In%20a%20separate%20bowl%20stir%20together%20the%20ingredients%20for%20the%20gratin%20topping%20then%20pour%20it%20over%20the%20gratin.%20Cover%20the%20baking%20dish%20with%20foil%20and%20bake%20for%2040%20minutes,%20then%20remove%20the%20foil%20and%20bake%20for%20another%2015%20to%2020%20minutes%20until%20the%20crumb%20topping%20is%20a%20golden%20brown.%3C/p%3E%3Cp%3EWhile%20this%20dish%20is%20baking%20start%20to%20prepare%20the%20ginger%20parsnip%20puree.%20Put%20the%20chopped%20parsnips,%20salt,%20white%20pepper%20(or%20regular%20will%20work%20too,%20I%20just%20like%20the%20way%20white%20pepper%20doesn't%20show%20in%20this%20dish),%20and%20ginger%20on%20a%20baking%20dish%20and%20mix%20together.%20Make%20sure%20all%20the%20parsnips%20are%20in%20a%20single%20layer%20and%20bake%20them%20in%20the%20same%20400%20degree%20F%20oven%20for%2020%20minutes.%3C/p%3E%3Cp%3EWhen%20the%20parsnips%20are%20done%20transfer%20them%20to%20a%20food%20processor%20along%20with%20the%20cream%20and%20blend%20until%20smooth.%20Adjust%20to%20taste%20with%20the%20salt%20and%20pepper.%20Put%20the%20puree%20in%20a%20covered%20ovenproof%20dish%20and%20put%20it%20back%20in%20the%20oven%20for%20up%20to%2020%20minutes.%20I%20left%20mine%20in%20for%20this%20long%20and%20it%20started%20to%20brown%20along%20the%20edges%20and%20gave%20it%20a%20bit%20more%20of%20a%20deeper,%20developed%20taste.%3C/p%3E){kind=link}
