Back to school with a healthy breakfast: Coffee Cup Egg Scramble
School starts today! This year we’re in charge of the morning carpool, which means I need breakfast recipes that are delicious, healthy and quick to make so I get my kids out the door on time.
Serving eggs is a great way to start a child’s day since they’re a great source of protein. Here’s a recipe that is easy enough for your older child to make on his or her own, while you’re getting the younger ones out of bed. Coffee Cup Egg Scramble
Prep Time: 1 minute
Cook Time: 45 to 60 seconds
Makes: 1 serving
Ingredients:
- 2 eggs
- 2 tablespoon milk
- 2 tablespoons shredded Cheddar cheese
- Salt and pepper to take Directions:
Coat a 12-ounce microwave-safe coffee mug with cooking spray.
Add eggs and milk, and beat until blended.
Microwave on HIGH 45 seconds.
Take mug out of the microwave and stir.
Place mug back into the microwave and cook for another 30 to 45 seconds longer, or until eggs are set.

Microwave ovens vary. Cooking times may need to be adjusted.
You can make it lower in fat by using a low fat cheese, skim milk, one whole egg and a three egg whites or 1/3 a cup of liquid egg whites.
Instead of cheese, add a few spoonfuls of salsa.
You can eat the eggs right out of the mug or pop it out on a plate and serve with a couple of pieces of whole wheat toast. Nutrition information per serving
