Ingredientes

  • 2 Tbsp. extra virgin olive oil
  • 1/2 c. minced tomato
  • 1/2 c. minced red pepper
  • 1/4 c. minced red onion
  • 1 Tbsp. chopped garlic
  • 2 c. long grain rice
  • 3 1/2 c. cool water
  • 2 Tbsp. rice wine vinegar
  • 2 Tbsp. Worcestershire sauce
  • 1 dsh salt and pepper splash freshly squeezed lemon juice splash freshly squeezed lime, juice

Direcciones

  1. Heat oil in Dutch oven over medium heat. Add in onions, peppers, and garlic, and saute/fry for 1 minute or possibly till softened.
  2. Add in tomatoes, rice, water, vinegar, Worcestershire sauce, salt and pepper, bring to a boil, cover, and turn heat to low. Simmer, covered for 20 min or possibly till rice is tender.
  3. Remove lid, fluff rice with a fork and sprinkle lemon and lime juice over top. Serve immediately.
