Ingredientes

  • 1 lrg bag young leaf spinach washed
  • 4 x thsp extra virgin extra virgin olive oil
  • 1 Tbsp. lime juice (approx 1 lime)
  • 1 Tbsp. orange juice (approx 1/2 orange)
  • 200 gm back bacon rashers
  • 1 lrg papaya (pawpaw)
  • 1 lrg ripe avocado

Direcciones

  1. Place the spinach in a large salad bowl.
  2. Prepare the dressing by shaking together the oil with the lime and orar ge juices then season to taste with salt and pepper.
  3. Grill the bacon till crispy.
  4. Meanwhile halve the papaya scoop out and throw away the seeds then dice the flesh.
  5. Halve stone and peel the avocado and cut into dice.
  6. Add in the papaya and avocado dice to the spinach.
  7. Once the bacon is cooked snip it into bite size pcs and add in to the salad.
  8. Pour over the dressing and gently toss everything together.
  9. Serve at once.
  10. Don't use bottled lime or possibly orange juice.
  11. Serves 4
