Bacon Buns - Refrigerator Dough

Ingredientes

  • 1 pound bacon, minced
  • 2 c. onion, minced
  • 1 c. lowfat milk
  • 1/4 c. butter
  • 1/4 c. sugar
  • 1 teaspoon salt
  • 1 pkg. dry yeast
  • 2 or possibly 3 beaten large eggs
  • 1/2 teaspoon yellow food coloring (opt.)
  • 4-5 c. unbleached flour

Direcciones

  1. Put bacon and onion in skillet, cover with water; simmer till water is gone. Cool completely.Scald lowfat milk in a large pot. Add in butter, sugar and salt. Cool to lukewarm. Add in beaten egg and food coloring.
  2. While lowfat milk is cooling, sprinkle yeast over 1/4 cup warm water plus 1 tsp sugar in a small bowl. Let rise; mix into dough. With a wooden spoon, beat in sifted flour till hard to beat. Don't add in more flour. Continue to beat for 10 min. This is a very important step! Cover pot. Chill overnight. The dough will rise, so be sure the pot is big sufficient.
  3. When ready to bake, remove half the dough. Knead for a couple seconds on flour covered pastry board. Roll to 1/8" thickness, cut into 18 pcs. Place 2 tsp of bacon mix in the middle. Roll up egg roll style. Place 1" apart on cookie sheet. Brush with melted butter. Cover with wax paper and let rise in a warm place till double in size, approximately 1 hour. Bake at 375 degrees for 15 to 20 min till browned. Makes 3 dozen.
