Bacon Fried Cheeseburger with Spicy Aioli

This here burger is the bomb diggity. Loaded with bacon, red onions and spicy pickles piled onto a sweet brioche bun topped with spicy aioli it’s every bacon lovers dream come true. Heck, it is every burger lovers dream come true. Did I mention I fried the burger in bacon fat? When I allow myself a cheat meal I make sure it is worth it people. I served these burgers with warm potato salad topped with soft boiled eggs, pickles, lots of herbs and mustard dressing. But I’ll have to tell you all about it in another post. When it comes to burgers bacon cheeseburger tops my list. I have lots of other favorites but there is something about gooey cheddar and crispy bacon atop of juicy hunk of meat that’s out of this world. Both Kurt and I love our burgers on the thinner side, but please don’t let that stop you from making your patties the way you love them. The star of this dish is the aioli made with mayo, ketchup, relish, worcestershire sauce and tabasco. It’s sort of like russian dressing on steroids, simply amazing. Promise me you’ll make it soon!

Bacon Fried Cheeseburger with Spicy Aioli

For the Aioli ½ cup mayo ½ cup ketchup 2 tbsp relish 1 tsp worcestershire sauce ½ tsp garlic powder 1 tbsp Tabasco sauce (or more) Burgers 1 lb ground chuck 8 slices sharp cheddar cheese red onion slices spicy pickles, sliced 6 slices bacon, cut in half salt and black pepper 4 wheat brioche buns Instructions

Make the aioli by combining all the ingredients in a small bowl. Refrigerate until ready to use. Fry bacon in a cast iron skillet. Remove to a paper towel lined plate. Divide ground chuck into four equal portions (if you like the thinner, divide into five). Working with one portion at a time shape into burgers. Using your thumb make an indentation in the center, this will prevent the center from bulging when frying. Season both sides if the patties with salt and pepper. Fry the patties in the cast iron skillet you cooked bacon in to desired wellness about 5 minutes on each side for medium. Top with cheddar, cover and cook another 2 minutes. Serve on a wheat brioche with a generous amount of the aioli, red onions, spicy pickles and bacon. 3.3.3070
