Receta Bacon Maple Muffins
Maple combined with a subtle touch of brown sugar and bacon gives these Bacon Maple Muffins the flavor of a hearty breakfast with a touch of sweetness.
Bacon Maple Muffins
- 6 slices center cut bacon, cooked with 2 Tablespoon brown sugar and crumbled
- ½ cup sugar
- ½ cup butter (1 stick), softened
- 2 eggs
- ½ teaspoon imitation maple extract
- 2 cups flour
- 1 Tablespoon dried buttermilk
- 1 Tbsp. baking powder
- ½ teaspoon salt
- 1 cup water
- 3 Tablespoons pure maple syrup (not pancake syrup)
Preheat oven to 350 degrees F.
In a large mixing bowl, cream butter and sugar.
Add eggs one at a time, beating after each addition.
In a separate bowl, whisk the flour, dried buttermilk, baking powder and salt.
Whisk together water, maple syrup and extract..
Alternately combine the flour and maple syrup mixture into the flour mixture until moistened.
Add 5 of the crumbled strips of bacon to the batter.
Stir batter until bacon pieces are incorporated, about 4 or 5 times.
Do not over mix.
Scoop batter into muffin pans sprayed with non stick spray, filing cups about ? full. top with the last piece of crumbled bacon.
Bake at 400 degree oven for 20 mins, or until muffins are springy to the touch. Remove from oven and cool on a wire rack.
You know you’re in trouble when you wake up in the middle of the night with an incredible recipe idea. That’s exactly what happened to me when I thought about adding brown sugar to my bacon and then tossing them into a muffin mix.
You see, dreams do come true. I was amazed at this recipe. The hubby was practically drooling. In fact, he requested that I fry up a few more strips of bacon so he can put the candied bacon in a sandwich.
I made these savory but sweet treats for our Christmas morning breakfast. The bad news was that I only made a dozen. I should have made a double batch.
