I made these Chicken Bites for the Super Bowl Game and they were fantastic! Serve them with your favorite BBQ sauce, warmed or make the BBQ sauce recipe below~

*If you prefer to serve these as a main dish, follow the recipe for~ Bacon Wrapped Chicken Breasts~

Line a rimmed baking sheet with foil~

Use Thick Slices of~

Good Quality Bacon~

Boneless, Skinless Chicken Breasts~

Cut each Chicken Breast in half~

Cut each half into 4 or 5 bite size pieces~

Mrs. Dash Garlic & Herb Salt-free Seasoning~

Sprinkle with seasoning~ Turn over~

Season other side of chicken bites~

Place bacon strips on surface~

Place one chicken bite on one bacon strip~

Roll chicken bite up in bacon strip~

Place seam side down~

On foil lined baking sheet~

Continue rolling chicken bites in bacon~

Place on baking sheet~

Cover with foil, Bake at 375 for 1 hour~

Remove foil, Bake 10-15 mins. longer~

Serve with your favorite BBQ Sauce~

I like to serve with warmed BBQ Sauce~

Chicken Bites Wrapped in Bacon~

30 slices thick bacon

3 boneless, skinless chicken breasts

cut in half lengthwise

then each half cut into 4 or 5 bite size pieces

Preheat oven to 375.

Line a 15 x 10 inch rimmed baking sheet with foil; set aside.

Wrap one slice of bacon around each chicken bite and place on baking sheet, seam side down

Cover with foil.

Bake for 1 hour. Remove foil and bake for an additional 10-15 minutes. Remove from oven, drain on paper towels.

Serve with your favorite BBQ Sauce

*Bacon Wrapped Chicken Breasts~

6 slices thick bacon

3 boneless, skinless chicken breasts, cut in half lengthwise

BBQ Sauce of your choice.

Preheat oven to 375.

Line a 15 x 10 inch rimmed baking sheet with foil; set aside.

Wrap one slice of bacon around each chicken piece. Place on baking sheet, seam side down.

Cover with foil.

Bake for 1 hour and 15 minutes. Remove foil and bake for an additional 10-15 minutes. Remove from oven, drain on paper towels.

Serve with your favorite BBQ sauce.

In a small saucepan, bring rhubarb, blueberries and water to a boil. Reduce heat; simmer, uncovered for 5-6 minutes or until tender. Remove from heat; cool slightly.

Place rhubarb/blueberry mixture in a blender, food processor, or use an immersion blender. Blend or process until smooth. Set aside.

In a large saucepan, saute' onion in oil until tender, add garlic; saute' 1 minute longer. Stir in the remaining ingredients. Cook, uncovered over medium low heat for 20 minutes and sauce has thickened.

Health Note: Vegetables offer a host of nutrients including vitamins A and C to name a few. Be sure to get at least 3 to 5 servings of veggies daily~
