%3C/p%3E%3Cp%3EEggplant%20or%20Bademjan%20%20is%20like%20'potato%20of%20Iran'and%20there%20are%20several%20eggplant%20dishes%20but%20with%20meat%20a%20well.You%20can%20have%20it%20in%20dips,sides,main%20etc%20and%20this%20is%20a%20simple%20main%20course%20where%20it%20is%20folded%20into%20rice.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3ECube%20the%20eggplant%20into%20bite%20size%20pieces%20and%20salt%20it.%20Let%20it%20sit%20for%20atleast%20half%20an%20hour%20when%20it%20lets%20out%20the%20bitterness.%20After%20atleast%2030%20minutes,squeeze%20the%20eggplant%20pieces%20and%20drain%20them%20on%20paper%20towels.Chop%20the%20onion%20into%20long%20thin%20pieces.%20Blanch%20the%20tomatoes%20in%20hot%20water%20and%20peel%20and%20chop%20them%20into%20small%20pieces.%3C/p%3E%3Cp%3EHeat%204%20tbsp%20of%20oil%20in%20a%20thick%20bottomed%20pan,add%20in%20oniion%20and%20saute%20till%20it%20starts%20to%20brown.%20Add%20in%20rice%20and%20stir%20till%20it%20starts%20to%20brown%20and%20dry.Make%20sure%20there%20is%20enough%20oil%20for%20this.Add%20in%20the%20blanched,peeled%20and%20chopped%20tomatoes,salt%20,pepper%20and%20enough%20water%20as%20needed%20to%20cook%20the%20rice.%20Bring%20to%20a%20boil,reduce,cover%20and%20cook%20till%20rice%20is%20(almost)%20done.This%20depends%20on%20the%20cooking%20time%20of%20basmati%20used.%3C/p%3E%3Cp%3EMeanwhile%20heat%202-3%20tbsp%20of%20oil%20in%20another%20pan.%20Add%20in%20the%20drained%20eggplant%20pieces%20and%20saute%20till%20they%20start%20to%20brown.%20Drain%20them%20on%20paper%20towels%20for%20removing%20excess%20oil.%3C/p%3E%3Cp%3EOnce%20the%20rice%20is%20almost%20done,%20fold%20in%20the%20eggplant%20pieces.%20Sprinkle%20dill%20and%20mix%20well.Cover%20the%20dish%20with%20a%20lid%20wrapped%20in%20towel%20and%20steam%20for%20about%2010-15%20minutes%20till%20the%20flavours%20blend.%3C/p%3E%3Cp%3EWhat%20I%20did%20was,I%20folded%20the%20eggplant%20pieces%20when%20rice%20was%20almost%20cooked,then%20transferred%20everything%20to%20a%20smaller%20dish,covered%20with%20a%20lid%20and%20put%20the%20dish%20in%20a%20pressure%20cooker%20/steamer%20and%20steamer%20it%20for%20about%205-10%20minutes%20till%20everything%20gets%20blended%20and%20cooked.This%20is%20my%20way%20rather%20than%20the%20mentioned%20Iranian%20way.%3C/p%3E%3Cp%3EServe%20the%20rice%20with%20cucumber%20dip%20or%20raitha.%3C/p%3E%3Cp%3EMast%20o%20Khiar-%20Iranian%20Yoghurt%20&%20Cucumber%20Dip%3C/p%3E%3Cp%3EThis%20is%20s%20simple%20dip%20or%20raitha%20as%20we%20can%20say,where%20seedless%20cucumbers%20are%20mixed%20into%20thick%20yoghurt%20spiced%20with%20salt,pepper%20and%20dried%20mint.%20The%20name%20literally%20translates%20to%20yoghurt%20(mast)%20and%20cucumber%20(khiar%20-%20remeber%20it%20is%20called%20kheera%20in%20Hindi).Normally%20Persian%20cucumbers%20are%20used%20which%20are%20similar%20to%20seedless%20ones.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ECucumber%20:%201%20preferbly%20seedless,though%20any%20thing%20will%20do.%3C/p%3E%3Cp%3EYoghurt:1%20cup%20+%20as%20needed%3C/p%3E%3Cp%3ESalt%20&%20Pepper:%20as%20per%20taste%3C/p%3E%3Cp%3EDried%20Mint:%201%20tbsp%20or%20more.%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3EDice%20the%20cucumber%20into%20small%20bite%20size%20pieces%20optionally%20peeling%20and%20deseeding%20it.%3C/p%3E%3Cp%3ETake%20yoghurt%20in%20a%20bowl,add%20in%20the%20salt,pepper%20and%20dried%20mint.%20Mix%20well.%20Fold%20in%20the%20cucumber%20pieces.Adjust%20the%20salt%20and%20seasonings%20and%20serve%20with%20pita%20or%20rice%20(as%20I%20did)%20or%20chips/crackers%20as%20a%20dip.You%20can%20even%20see%20pictorial%20representation%20of%20this%20here.%3C/p%3E%3Cp%3EThe%20combo%20was%20perfect.%20The%20rice%20was%20hearty.%20The%20taste%20was%20excellent%20as%20with%20any%20spiced%20rice%20and%20the%20way%20of%20making%20was%20interesting%20as%20well.%20The%20dip%20reeked%20of%20mint%20which%20I%20had%20added%20more,but%20it%20was%20refreshing.Hearty%20meal%20from%20Iran%20it%20is.%3C/p%3E%3Cp%3EI%20hope%20Sweet%20Artichoke%20accepts%20the%20combo%20%20for%20AWED%20:%20Iran,%20an%20event%20by%20DK.%3C/p%3E){kind=link}
