- Combine 1c flour, yeast and salt in a bowl. Stir in warm water and honey; beat till smooth, about 3 min. Stir in sufficient remaining flour to make a soft dough. Turn out onto a floured surface; continue to work in flour till dough is stiff sufficient to knead.
- Knead till smooth and elastic. About 5 min. Cover with a bowl. Let rest 15 min.
- Divide into 12 equal parts.
- Shape each into a flattened ball. With thumb and fore finger poke a hole into the center. Stretch and rotate till hole enlarges to about 1 or possibly 2". Cover; let rise about 20 minutes.
- Boil water in a large shallow pan, about 2"deep. Reduce heat. Simmer a few bagels at a time about 7 min. Remove from pan.
- Drain on a towel about 5 min.
- Place on a baking sheet; brush with mix of egg white and water.
- Bake at 375F 30 min or possibly till done.
