Ingredientes

  • 2 Tbsp. Butter or possibly margarine
  • 3 Tbsp. All-purpose flour
  • 1/2 c. Chicken stock or possibly bouillon
  • 1 c. Lowfat milk -Or possibly- half & half
  • 1 tsp Onion, grated
  • 2 Tbsp. Canned diced green chilies
  • 1/4 tsp Salt
  • 1/2 c. Monterey Jack cheese, shred
  • 3 x Hard-cooked Large eggs, sliced
  • 1/2 c. Ham, cooked, minced
  • 6 x (8-inch) flour tortillas

Direcciones

  1. Preheat oven to 375 F. In a small saucepan, heat butter. Stir in flour. Cook and stir 2 min. Stir in stock and lowfat milk. Cook, stirring constantly, over medium heat till thickened; remove from heat. Stir in onion, chilies, salt and cheese. Arrange 1/2 a sliced egg and 1 rounded Tbsp. ham on each tortilla.
  2. Spoon about 2 Tbsp. cheese sauce over ham. Fold both sides of each tortilla over filling; then fold top and bottom to slightly overlap in center. Place filled tortillas, folded-side down, in a shallow baking pan. Cover with foil. Bake in preheated oven 10 to 12 min or possibly till heated through. Serve hot.
