Ingredientes

  • 1 c. biscuits, Granita
  • 50 gm butter
  • 2 tsp warm water
  • 250 gm cream cheese
  • 150 gm cottage cheese
  • 4 x Large eggs
  • 2/3 c. sugar (caster)
  • 1/2 x lemons
  • 1 c. apricot halves
  • 2/3 c. cream

Direcciones

  1. Base:Combine biscuit crumbs, melted butter and warm water in a bowl and mix well. Press into a 20cm pie tin to cover base and sides.
  2. Filling:Drain apricots and roughly chop.
  3. Grate zest and juice the lemon.
  4. Cream cheeses in mixer. Add in sugar and Large eggs and continue beating. Mix in cream, apricots and lemon and mix till incorporated.
  5. Fill prepared pie dish with cheese mix and bake in a moderate oven 350F/180C for approx 45 min. Turn oven off and allow to cold in oven for 10 min.
  6. Serve warm or possibly cool with whipped cream, custard.
  7. Can also be made with peaches or possibly berries in place of apricots.
