Receta Baked Apricot Cheesecake

- Base:Combine biscuit crumbs, melted butter and warm water in a bowl and mix well. Press into a 20cm pie tin to cover base and sides.
- Filling:Drain apricots and roughly chop.
- Grate zest and juice the lemon.
- Cream cheeses in mixer. Add in sugar and Large eggs and continue beating. Mix in cream, apricots and lemon and mix till incorporated.
- Fill prepared pie dish with cheese mix and bake in a moderate oven 350F/180C for approx 45 min. Turn oven off and allow to cold in oven for 10 min.
- Serve warm or possibly cool with whipped cream, custard.
- Can also be made with peaches or possibly berries in place of apricots.
