Baked Apricot Pasta Dessert

Ingredientes

  • 250 gm pasta, spiral
  • 2 c. dry apricots
  • 4 x Large eggs
  • 1 c. cream
  • 1/2 c. lowfat milk
  • 1/2 c. sugar (caster)
  • 1/2 tsp nutmeg, grnd
  • 1/2 tsp cinnamon, grnd
  • 1 tsp sugar (caster)
  • 1/2 tsp nutmeg, grnd
  • 1/2 tsp cinnamon, grnd

Direcciones

  1. Cook pasta in boiling water till tender (12 min). Drain well.
  2. Chop then soak apricots in boiling water for 5 min to soften.
  3. Combine Large eggs, cream, lowfat milk, sugar, nutmeg and cinnamon in a bowl. Mix well, add in cooked pasta and apricots and stir well.
  4. Pour mix into a shallow ovenproof dish and sprinkle with extra sugar and spices. Place dish in a baking tray and pour in sufficient warm water to come half way up the sides of the dish. Bake in a moderate oven (350F) for about 40 min till just set.
  5. Serves 4.
  6. A simple dessert.
