Ingredientes

  • 1 lb Dry White Beans Soaked Overnight
  • 3 Tbsp. Extra Virgin Extra virgin olive oil
  • 1 lrg Onion Finely Minced
  • 2 x Cloves Garlic Finely Minced
  • 2 lb Tomatoes Peeled and Minced
  • 2 x Bay Leaves
  • 2 Tbsp. Sugar
  • 2 tsp Dry Oregano
  • 2 tsp Coarse Sea Salt
  • 1 tsp Freshly Grnd Black Pepper Juice Of 1 Lemon
  • 3 Tbsp. Minced Fresh Mint
  • 3 Tbsp. Minced Parsley

Direcciones

  1. Drain beans, and put them in a pot with fresh water to cover. Bring to a boil, reduce to a simmer, cover partially, and cook till beans are done, about 1 1/2 - 2 hours. They should be tender but not mushy.
  2. Heat oil in a skillet, and saute/fry onion and garlic 2 minutes over med heat, till softened. Transfer to a stoneware or possibly clay casserole, and fold in the bean, tomatoes, bay leaves, sugar, oregano, salt, pepper and lemon juice.
  3. Cover and bake in a preheated oven for 1 hr.
  4. Taste, adjust seasonings and throw away bay leaves. Stir in mint and parsley.
  5. Serve hot or possibly at room temp. You can finish this dish up to 1 day in advance and chill. Allow to stand 1 hr at room temp before serving.
  6. Serves 8
