Serve Mom Breakfast in Bed with this delicious make ahead Baked Blueberry French Toast. Make Mom a breakfast tray with a single rose, a few of mom's favorite chocolates and baked blueberry french toast topped with whipped cream~ Add a glass of Mimosa, and Mom will be delighted~
Mimosa Recipe~
1 bottle Sparkling Wine or Champagne
1 carton Orange Juice
Triple Sec, optional
Fill half of a champagne flute with chilled sparkling wine or champagne, and top off with chilled orange juice. Stir gently. Add a splash of triple sec. Decorate the rim of the glass with sliced strawberries.
- Baked French Toast with Berries~
- 1 8-oz. loaf or 1/2 of a 1-lb. loaf French bread, cut into 3/4-inch slices
- 4 beaten eggs
- 2 cups milk
- 1/4 cup sugar
- 1 T vanilla extract
- 2/3 cup flour
- 1/3 cup packed brown sugar
- 1/2 t ground cinnamon
- 1/4 cup butter
- 2 cups fresh or frozen blueberries
- Blueberry Syrup, optional
Whipped Topping, optional
Lightly grease a 3-quart rectangle baking dish. Arrange bread slices in baking dish.
In a large bowl, stir together eggs, milk, sugar, and vanilla. Slowly pour over bread. Press lightly with the back of a large spoon to moisten bread. Cover and chill in the refrigerator for 8 to 24 hours.
Combine flour, brown sugar and cinnamon. Using a pastry blender, cut in butter until pieces are the size of small peas. Cover; chill in refrigerator for up to 24 hours. Before baking, sprinkle blueberries over bread; sprinkle flour mixture over berries. Bake, uncovered, in a 350 oven for 25 to 30 minutes or until knife inserted off-center comes out clean. Let stand 5 minutes; top with whipped topping and/or blueberry syrup.
