After such a stressful work week, it was so nice to sleep in on Saturday morning. It had not been a good week at all. I didn’t get to run all week. I decided to skip on the Drag N Fly race. I knew that I wouldn’t do well and in retrospect I am glad I didn’t go. It rained! While I was lounging in bed and being lazy, I decided that I was going to make French Toast for breakfast for me and the hubby.

I made Baked Cinnamon French Toast Sticks.

Baked Cinnamon French Toast Sticks

Serves: 15 sticks

4-5 slices of bread

Combine all the ingredients except the cinnamon sugar.

Coat each pieces in the egg mixture and place on a baking sheet generously coated with non stick spray.

Sprinkle each piece with some cinnamon sugar

Set the oven to broil.

Place the pan in the oven but don’t close the door all the way. Cook for about 2 to 3 minutes. Flip the sticks and sprinkle more cinnamon sugar on the other side and broil for another 2 to 3 minutes.

Serve with your favorite syrup.

If you have kids, the sticks are perfect and I like the sticks for portion control.

The hubby didn’t complain that I decided to make breakfast for us on a Saturday morning.
