Receta Baked Cod with Red Peppers and Olives, the update
I was in a Moroccan mood this weekend….
As usual, we had to have fish on Friday. Mon mari would be so disappointed if we didn’t have fish.
I grabbed my big Moroccan cook book and started looking.
As usual, I couldn’t find anything that was ‘just right’.
As usual, I improvised.
Even mon mari was pleased.
Baked Cod with Red Peppers and Olives
Total time: 35 minutes
Ingredients:
12oz (360gr) cod, halibut, or other firm, white fish
1 onion, chopped
1/2 red bell pepper, chopped
2 cloves garlic, minced
8oz (240gr) tomatoes, chopped
1/2 cup green olives, cut in half
1 tbs sherry vinegar
1 tsp paprika
1/2 tsp cumin
1/2 tsp sumac
1 tsp zaatar
1 tsp Herbes de Provence
2 tsp olive oil Instructions:
Sauté onions and pepper in oil until tender.
Add garlic, paprika, cumin and sauté a few minutes longer.
Add tomatoes and heat to simmering.
Stir in sherry vinegar and spoon into a baking dish.
Arrange cod on top of vegetables.
Sprinkle sumac, zaatar and Herbes on fish.
Bake, uncovered, 400F (200C) for 15 – 20 minutes, depending on thickness, until done. Fish is done when it starts to turn opaque and flakes with a fork.
Remove and and serve.

We changed our minds about the pantry.
Mon mari had originally painted the cabinet doors green… Because they had been green and that seemed easiest.
It was kind of an institutional green.
When it was time to paint all of the rest of the trim and frames and doors we decided maybe we’d prefer blue.
Since the floor tile is a rather dingy gray (even when scrubbed clean) we wanted a bit of color to offset it. Anyway, it’s blue.
He even tarted up the boring, plain, dingy door going into the barn by painting it white, then adding some blue faux inserts to match the blue frame. You can refer back to last week’s post to see the dingy original. The doorway into the house is also freshly painted blue.
He used an oil-based paint, which meant that it took forever to dry in our damp weather. The girls were very upset as they have dinner in the pantry and they weren’t allowed in there for 2 days.
Oh they were fed…. Food and water dishes were moved into the den for their convenience.
But the den is not the right room.
They eat and drink in the pantry.
It’s not right to do it in the den.
They sat, next to their full water dish, and stared at the door to the pantry, waiting for me to open it so they could have a drink.. This is about how it will look when it’s finished. It’s still the pantry, after all. The tall cabinet houses the potatoes and onions and basket of cleaning rags and my walking boots and the girls toy box….
That will stay as will my exercise bike. He still has doors to make for the cabinet under the sink – which, as it turns out, is perfect for the dog food containers.
Slowly but surely…..
