Ingredientes

  • 1/2 c. Extra virgin olive oil
  • 2 Tbsp. Wine vinegar
  • 2 x Bay leaves
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 Tbsp. Bread crumbs
  • 2 lb Eel (large variety), skinned and cut into 4-inch pcs Additional bay leaves

Direcciones

  1. Mix together oil, vinegar, bay leaves, salt, pepper and bread crumbs.
  2. Marinate eel pcs in this mix 3 hrs, turning frequently. Place eel pcs on skewers, alternating with bay leaves. Place skewers in greased baking dish, and bake in moderate oven (375), 30 min, turning often.
  3. Brush with remaining marinade while cooking.
  4. Serves 4
