Ingredientes

  • 12 x Belgian endive heads - (2 1/4 lbs total) Salt to taste Freshly-grnd black pepper to taste
  • 6 Tbsp. extra-virgin extra virgin olive oil

Direcciones

  1. Heat the oven to 400 degrees.
  2. Trim then cut the endive in half lengthwise; wash and shake dry. Place the endive halves, cut-side down in a jellyroll pan. Add in salt and pepper to taste and the oil, distributing it proportionately.
  3. Bake the endive 10 min and turn, then bake it another 6 to 7 min and turn again. Cook it till its base feels tender when prodded with a fork, about 20 min longer. Allow it to settle a few min before serving. It is also good at room temperature.
  4. This recipe yields 6 servings.
