Ingredientes

  • 4 lb Filet of fish
  • 1 x Green pepper, minced
  • 3 x Garlic cloves, minced
  • 3 x Bay leaves
  • 1 can Stewed tomatoes, pureed
  • 2 lrg Onions, minced
  • 4 x Celery stalks, minced
  • 1/2 bn parsley, minced x Healthy pinch of sugar
  • 6 x Potatoes, cut-up x Extra virgin olive oil

Direcciones

  1. Saute/fry onions, pepper, celery, garlic, and parsley in extra virgin olive oil. Add in blended tomatoes and bay leaves. Cook approximately for 1 hour, add in sugar. Oil a roasting pan, season the fish with salt and pepper. Place fish in pan with cut-up potatoes. Pour sauce over potatoes and fish. Bake for approximately 1 hour. Basting every 15 min.
