Baked Flounder with Parmesan Crumbs

You can substitute other mild white fish, such as cod or haddock; cook it a little longer for thicker fish, and reduce oven temp to 400.

This is my favorite cool-weather easy fish recipe for company.

I've never made it with fresh bread crumbs; I use store-bought Panko bread crumbs.

You can use less cheese and butter, and it still tastes great.

Ingredientes

  • 4 flounder fillets (1 1/2 to 2 pounds total)
  • salt and freshly ground pepper
  • 3/4 cups freshly grated Parmesan cheese (or less)
  • 1/2 cup coarse fresh bread crumbs (I use Panko crumbs)
  • 4 Tbsp unsalted butter, melted (or less)
  • 2 Tbsp extra-virgin olive oil

Direcciones

  1. Preheat the oven to 425 (or 400 for thicker fish)
  2. In a large baking dish, season the fish fillets with salt and pepper. Mix the Parmesan with the bread crumbs, melted butter, and olive oil and sprinkle over the fillets.
  3. Bake for 10 to 15 minutes, or until the fish is cooked and the topping is golden. Let stand for 5 minutes before serving.
