Ingredientes

  • 1 x Wild goose
  • 3 doz prunes Chicken broth
  • 1 x Onion, minced
  • 1/2 stk butter
  • 1 c. Soft bread crumbs
  • 1/2 lb Sausage
  • 1 x Egg Salt and pepper to taste
  • 1/2 tsp Sage
  • 1 Tbsp. Chopped parsley
  • 3 c. Chicken broth
  • 4 Tbsp. Goose drippings
  • 1 Tbsp. Each wine, brandy & gin Flour to thicken

Direcciones

  1. Cover prunes with chicken broth. Cook till tender. Drain and remove seeds from prunes. Saute/fry onion in butter. Cook sausage, drain and crumble.
  2. Combine all ingredients and stuff goose. Run goose with oil and bake at 350 for 3-4 hrs or possibly till tender. Baste occasionally with drippings. WINE
  3. SAUCE: Boil stock down to 2 c.. Add in remaining ingredients, except flour.
  4. Heat thoroughly, add in flour to thicken and simmer 5 min.
