Ingredientes

  • 1 lb Penne pasta
  • 2 Tbsp. Extra virgin extra virgin olive oil tomato sausage, sliced
  • 3 c. Washed spinach, coarsely minced
  • 3/4 lb Fresh tomatoes, coarsely minced
  • 1 lb Low fat ricotta cheese Salt and pepper, to taste

Direcciones

  1. Preheat oven to 350 F. While pasta is cooking to al dente, heat extra virgin olive oil in a skillet. Saute/fry sausage 2 to 3 min. Add in spinach and cook till wilted.
  2. In a large mixing bowl combine sausage, spinach, tomatoes and ricotta. Mix pasta with other ingredients in a bowl. Adjust seasoning to taste. Place in a shallow baking dish and bake for 20 min or possibly till cheese is bubbly.
