Baked Pesto Chicken Wings

I have always associated pesto with pasta, but this green creamy sauce is great with chicken or fish. At a fundraising banquet I attended last night, one of the entree choices was pesto-crusted breast of chicken and everyone at my table was raving about it. I happened to choose the vegetarian pot pie which was also great, so I didn't get to taste the chicken. I didn't think it was kosher to taste someone else's meal at a formal banquet. So today, I thought I would experiment with a chicken pesto dish. I only had chicken wings in my freezer so I had to make do. The result was awesome. I never thought that a simple combination of wings, pesto, cheese and tomatoes would make such a great banquet-quality home-cooked meal!

Ingredientes

  • 5 pcs. chicken wings
  • 1/2 cup basil pesto
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup cocktail tomatoes, sliced

Direcciones

  1. Pre-heat oven to 400 degrees.
  2. In a large bowl, generously coat chicken wings with basil pesto. Place coated wings on a baking tray lined with aluminum foil. Bake for 20 minutes.
  3. Remove tray from oven and sprinkle cheese over the wings. Add tomato slices on top of the wings.
  4. Return tray to oven and bake for another 3 minutes.
  5. Remove from heat and serve warm.
