Ingredientes

  • 4 x pigs trotters
  • 1 x onion peeled and minced
  • 2 x carrots peeled and minced
  • 1 x bouquet garni squeeze of lemon juice healthy pinch of salt
  • 225 gm sweetbreads peeled blanched and minced lOOg oyster mushrooms washed and minced
  • 4 Tbsp. double cream
  • 1 x salt and freshly grnd black pepper
  • 50 gm melted butter

Direcciones

  1. Scald trotters in boiling water to remove any hairs then split down the middle on the underside. Place in a pan with onion carrots bouquet garni lemon juice and salt. Cover with water and cook for 2hr. Remove and drain. Carefully remove bones retaining the shape. Mix sweetbreads and mushrooms in a bowl. Stir in cream and season with salt and pepper. Spoon into the trotters and secure with string. Brush with butter and bake at Gas 6 400 degrees F/200 degrees C for 30 minutes or possibly till golden. Serve with lentils and baby turnips.
