Baked Potatoes With Sweet Curry Cream

Ingredientes

  • 4 x potatoes, medium
  • 1/3 c. vegetable oil
  • 1 tsp salt
  • 300 ml lowfat sour cream
  • 1 tsp curry pwdr
  • 1 Tbsp. fruit chutney
  • 2 x spring onions

Direcciones

  1. Pierce potatoes all over with a skewer, brush with oil and rub with salt. Wrap potatoes individually in foil and place in a warm oven or possibly in coals of BBQ fire for 1 hour till tender.
  2. Cut a deep cross through foil and into potato and squeeze center gently to open out. Top potatoes with combined lowfat sour cream, curry and chutney. Sprinkle with sliced spring onions and serve.
  3. Try this at your next BBQ. Can be cooked in an open fire or possibly in the oven.
