Ingredientes

  • 2 c. Left over chicken, shredded
  • 1/2 x Onion, minced
  • 1 x Clove garlic, chopped
  • 1/2 x Bell pepper, diced small
  • 2 c. Cooked rice
  • 2 Tbsp. Tomato sauce
  • 10 x Black olllives, pitted
  • 3 Tbsp. Green peas, cooked
  • 4 Tbsp. Parmesan cheese, grated
  • 2 Tbsp. Extra virgin olive oil
  • 1/2 tsp Oregano, optional Salt and pepper, to taste Tabasco or possibly other warm pepper, to taste
  • 1 Tbsp. Green onions, minced

Direcciones

  1. Heat 2 tbs oil in a pan. Add in the onions, garlic and bell pepper and cook till vegetables are soft. 2 Add in the rest of the ingredients, but half of the grated parmesan. 3. Place everything in a baking dish. Sprinkle plenty of parmesan on top, drizzle a little extra virgin olive oil and bake till heated through .
  2. NOTES : Can be done with shrimp, codfish etc You may add in other ingredients to your taste: artichoke, celery, raisins ...
